This is whole dried kikurage mushroom. It is cultivated in Japan and features a uniquely crunchy texture and chewiness not found in other mushrooms.

Dried kikurage has richer nutrition and more umami than its fresh counterpart. As a result, you can enjoy both its health benefits and plant-based dashi with ease.

Instructions

Place the dried kikurage in a bowl filled with water, and let it soak for 15~20 minutes. By using lukewarm water, you can reduce the soaking time by approximately 5 minutes.

If you wish to enjoy the kikurage with its texture and flavor closer to its raw state, refrigerate the soaking kikurage for 6 hours.

After the rehydration process, add it to any dish you like. If necessary, cut or slice it to a smaller size according to your preferences.

You can reuse the water used for rehydrating the kikurage as a soup stock.
